If the throne to a kingdom is vacant, who oversees it until a successor is crowned?

The throne is normally never vacant that is the whole point of Monarchy there is always the next heir or the next conqueror who has taken the throne. If the new Monarch is in their minority a Regent rules often the consort of the former Monarch or a close relative.
