Can I defer admission to University?

I got accepted into CSU Long Beach and University of Washington and I was wondering, can I defer admission until next fall to either one( fall 2010)? I really would like the year off to do some career searching and traveling to Europe and Africa and probably more volunteer work. Please help! Thanks!
